This year I tried the biscuits covered with fondant sugar ... not particularly like them, to be honest ... the dark is too sweet, overly sweet However, if done well, they are very beautiful :)

Mine are far from beautiful, but I have tried hard to make them as best I could ... I only say that to make these biscuits 6, it took me two hours ... and I found myself at dinner just before midnight :)

Comunquq, fatigue, at the sight of these Santas cicciottoni, has disappeared ;) are very satisfied !!!

Simple enough to do, it just takes a little 'patience ;) and me lately is missing ... will, as I wrote a few posts ago, which this year is harder to find the Christmas spirit ... the fact is that every time you are in the kitchen, I have nerves on edge ... but it will pass, I'm sure ...

This time I added a bit 'of food coloring gel and a few drops of aroma :D

ingredients for the lemon sugar :

  • 100g caster sugar
  • water to taste (1 teaspoon, maybe 1 and 1/2)
  • 2 drops of lemon aroma Drugs Palma
  • 1 pinch of green dye in gel

ingredients for sugary rum :

  • 100g caster sugar
  • water to taste (1 teaspoon, maybe 1 and 1/2)
  • 2 drops of aroma rum Drugs Palma
  • 1 pinch of orange dye in gel

ingredients for sugar and cinnamon:

  • 100 g of  sugar cane Eridania
  • water to taste (1 teaspoon, maybe 1 and 1/2)
  • 1 teaspoon ground cinnamon

I used a slightly different method from that of last year and I have found great differences.

For the first two types of lumps: put 1 teaspoon of water in a small bowl, add a pinch of dye in gel (I used a toothpick) and stir to melt the color. Add sugar and mix well with a spoon. The sugar should look like wet sand. If needed, add a little water still drips.

For lumps cinnamon:  pour the brown sugar in a small bowl, add the cinnamon and a teaspoon of water, mix well to moisten the sugar until you get the effect of "wet sand".

In both cases, then proceed as follows: moisten the silicone molds chocolates, drain excess water, then pour in each cavity a little 'sugar, pressing it with your fingers (pressing it VERY well!). Put the molds in the oven at 60 ° for about 30 minutes, to dry the sugar. Once removed from the oven, allow to dry for a few hours, even better for a night, and then turn the molds gently and pull out the plug.

Or "cookies in the jar" :) a nice idea for a present delicious ..

and I have prepared some ... for the moment I show only those for my sister, because today I will give them to him ;)

Finally I can post some more Christmas cookie :)

I have delivered just yesterday and were apparently quite popular ;)

There are two types: cookies made ​​of glass, of simple shortbread biscuits with a candy in the center :D and decorated gingerbread cookies with icing:

the recipes can be found already in the blog but for convenience is brought forth here ;) without forcing you to comb through all my blogghino..anche if ... not mind if you visited him everything and leave me some comments even in old posts:D

Cookies Glass (original recipe HERE )

Ingredients:

  • pastry (I have now made ​​my recipe Morena HERE find doses and procedure):)
  • hard candy colored

preparation:

Roll out the pastry into a sheet about 1 cm high. Cut out shapes to taste (I used the beautiful cutter Christmas of Guardini :) is not a show! ??!?!?) and then get to the center of each cookie a "cavity" with the cookie cutter that we like. Place in a baking pan covered with parchment paper.

Bake for about 6/7 minutes at 180 °. Remove from oven and place in each cavity a caramellina (or you can beat the candies with a rolling pin and a powder, if so, just put a teaspoon of powder in the cavities of the biscuits).

Return to the oven for another 5/6 minute.

Remove from the oven and wait for them to cool before removing from parchment paper.

Gingerbread cookies

  • 350 g flour 00
  • 160g caster sugar
  • 2 teaspoons ground ginger Tec.Al.
  • 1/4 teaspoon nutmeg powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon of clove powder
  • 1 teaspoon baking soda
  • 150g cold butter cut into chunks
  • Di 150 g miele di acacia Ca 'da Laisna
  • 1 pinch of salt
  • 1 egg

for the glaze:

  • 1 album
  • 200 g of icing sugar
  • Food coloring

to decorate:

  • sugar

In mixer bowl put the flour and sugar, spices, baking soda, butter cut into pieces and honey. Mix on medium speed until mixture is crumb, add the egg and mix until a dough. Wrap the dough in plastic wrap and put in the fridge to rest for at least an hour.

Past the necessary time, roll out the dough with a rolling pin to a thickness of about 7/8 mm. With pastry rings get the shapes, place them on a baking sheet covered with parchment paper and bake in oven at 180 degrees for about 10-12 minutes, until golden. In some biscuits before baking, I put a stick to make of "cookies on a stick":D

Once baked, put them to cool on a rack.

Meanwhile, prepare the glaze: mount the egg whites until stiff, incorporating a little at a time, and always beating, icing sugar. Once the cookies are cool ... way of decoration:)

I still have so much to learn and the piping bag is definitely not my best friend ... but slowly a little something I can combine :D

Are always looking for recipes and ideas for breakfast and recently I found on the blog " Lavender Honey "the recipe for Pan Satchel Integral , really delicious and very similar to the original (maybe even better ;) ) .. Needless to say, I tried to do that and also loved all'Omo! :) which is to say: GREAT SUCCESS! Since he breakfast at most take a coffee ... that's why I try to preclude delicious ideas to take it by the throat, the breakfast is a very important moment of the day and I think it should be done FOR GOOD!:)

but we come to the recipe!

Ingredients:

  • 300 g of white flour
  • 200 g of wheat flour Molino Chiavazza
  • 50 g of extra virgin olive oil
  • 100 g of warm milk
  • 180 g of warm water
  • half a cube of yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt

Preparation:

Pour the warm milk in a bowl, add the yeast and stir to dissolve, add sugar.

In the bowl of a planetary we put the two types of flour, warm water, oil, and we start to the mixture, then add the milk and leave to work the planetary until the mixture will become a ball pretty firm. At this point, we add the salt and let's work a few more minutes.

We cover the dough and let rise for an hour.

When the dough is leavened beautiful, we compress it gently with your hands to form a rectangle then rolled up on itself.

Put the mixture into a loaf pan (for me Happyflex )

and let rise until doubled.

At this point, we bake at 180 ° for 30 minutes.

Once baked, let cool and then ... .you can enjoy in many ways! I suggest there two, then ... you do;)

The recipe is my usual pastry :) but with the addition of green tea Matcha, here doses and preparation:

Ingredients:

The lamb chops fried ... one of the dishes that Caballero, my papa, amava..e that every Easter was preparato..da when he's gone, Mom has not seen preparato..è easy imagine why ..

A few nights ago I decided to try them and following the advice of Mom came also pretty good ;)

Ingredients 1 x: (already ... there are dishes that I prepare because like so much in Luke but not in me..e dishes, like this, that I love and that he does not appreciate instead :D)

Put the bread crumbs, flour and lightly beaten egg in three different bowls.

Salt and pepper the chops, dip them in flour, beaten egg and finally in breadcrumbs pressing to make it adhere well.

Heat oil in a pan and when it is hot add the chops.

Cook them on both sides, only need a few minuti..per check cooking try to pierce the meat, if the fork enters smoothly it's time to take off the heat.

Drain the oil and place on paper towels for a few minutes, if necessary add a little salt and serve.

I I ate with the accompanying mashed potatoes

Well yes ... I love it ... now I admit publicly .. :D

This man has really conquered! When I'm home I try not to miss his Kitchen Nightmare  and Hell's Kitchen  : D and now then I got it into my head to try some of his recipes :) as those suggesting the chefs in the restaurants that "going to save" are always recipes very simple ..

So, wandering on the net, I came across in his fondant potatoes ... HERE is the recipe for Italian but if you prefer to see Chef Ramsey at work, take a look here at this video  ;)

Ingredients:

  • 5 or 6 potatoes, more or less the same size
  • olive oil
  • a sprig of fresh thyme
  • a bit 'of butter
  • 200 ml chicken stock (I have replaced the nut soup, I used the stock cube Ferioli )
  • salt and pepper (to me Seasonings Potato Ariosto )

Peel the potatoes and cut them in half. Season the cut part with the seasonings. Heat a little 'oil in a pan that can then be put into the oven, and the potatoes cut side down. Add the thyme and butter spread them in the pan. Shake the pan so that the potatoes do not stick to the bottom and when they are golden, after about 10-15 minutes, turn them over and have them color on the other side. Then add the hot broth and finish cooking in the oven at 200 ° C for 15-20 minutes. They will be cooked when the tip of a knife penetrates easily.

I, as always when there are mushrooms, I simply cook it .. :D but the Omo has also appreciated if you asked me to replicate omitting the sausage:)

x 1 ingredients:

The night before to prepare this dish I put to soak the beans and I left them overnight in water. Next morning I drained them, passed them under running water and then I put them to boil in water until -assaggiandoli- I heard were pretty soft.

If you want you can also do with cannellini beans in a can or already cooked but, as for me like them even those with dried beans is another matter ;)

Put the dried mushrooms to soak in warm water.

Peel a clove of garlic and place in a pan with a little 'oil and sausage cut into slices. When the garlic is golden beautiful, delete and add the canned tomatoes. As soon as the tomatoes has evaporated add the beans with a little 'of their water and drained mushrooms.

Reduce heat and simmer for about 15-20 minutes, stirring occasionally.

Season with salt, add a sprinkling of black pepper and red pepper and serve.

Every now place some recipe sea :) too often for my taste ... I have to try to convert the Omo:)

This recipe was given to me by my fishmonger and I must say it is not male..anche if, like a good greedy that I am, I prefer them fried squid ;)

x 2 ingredients:

Clean the squid, remove the "tufts" and "wings" and chop coarsely and place in a bowl.

In a frying pan (for me THIS Pedrini) with a little olive oil to melt the anchovy fillets, add them to the bowl, combine the garlic finely chopped, 1 egg, chopped parsley, breadcrumbs and a pinch salting Mediterranean sea. Mix everything well.

Fill the squid with the mixture and close them with a toothpick.

Pour a little oil in a pan and when it is hot add the stuffed squid, cook for some 4/5 minutes per side, deglaze with white wine, add a sprinkling of chopped parsley and serve.

If these cookies they had noticed a few years ago, I would have turned my head the other way: I hated the miele..non I had ever tasted but I was sure that I did not like ...

But, I finally overcame my fear to try new flavors, and a couple of years honey is present in our pantry and our table .. ;)

The original recipe I got it on GialloZafferano , inexhaustible source of ideas and suggestions;)

and strangely I did not change a comma :)

Ingredients:

Mix the flour and starch. Put the butter and sugar in the bowl of the planetary, insert the hook K or leaf and work up to become a frothy cream. Add egg and honey, stirring constantly. Add poppy seeds to the flour and baking powder, then add to the cream and mix well, add the lemon flavor. Knead until the mixture becomes compact.

Roll out the dough on lightly floured board to a height of about 1.5 cm. Cut out the molds to your liking and bake in oven at 180 degrees for 13-15 minutes. Take the cookies cool on a rack.

A new first course ... I guess I'm getting "pasta-making" ... I appreciate more and more the first .. :)

This time, taking advantage of an evening alone at home, I prepared a first mare..l'Omo would eat (and eat, with very few exceptions ..) only pasta with meat sauce:D

x 2 ingredients:

First of all to boil the pasta in plenty of boiling salted water.

Pour a little olive oil in a pan, add a clove of garlic, we do cook a couple of minutes and then add the drained clams (not throw away the water from the clams, serve ;) ). We cover the pan and cook for a few minutes, add the wine and evaporated once the preserve of tomato and a teaspoon of spicy bruschetta (or alternatively: tomato and chili). As soon as the tomato is a bit 'withdrawn, we add water clams, climb and our sauce is ready.

Scoliamo the pasta  and we blow a few minutes in the pan. Add a sprinkling of chopped parsley and serve.

CHRISTMAS COOKIES BICOLORE SCENTED ORANGE

Christmas is coming, and things could be better than a bit 'of Christmas cookies to enter fully into the atmosphere of the holidays ?!
This recipe is very simple and loooong scented, suitable for those who have the "biscuit maker".
You will get good biscuits and impressive also suitable for small cadeaux Christmas.
RECIPE :
Fit 180 grams of soft butter with 90 g sugar and 10 grams of powdered sugar icing.

Mix well with a whisk.

Serves 2 molds by 22 cm: 250 grams of flour, 2 eggs, 120 grams of yogurt, 120 ml of milk, 110 grams of butter, a tablespoon of red food coloring, 300 grams of sugar, 2 pinches of salt, 1 tablespoon vanilla essence or 1 vanilla, 2 tablespoons of white vinegar and 1 teaspoon of baking soda.

Ingredients seem a lot, but I assure you it is a sweet easy.

This recipe was a beautiful discovery and as even the Omo has appreciated, it has already been reported in my "book of recipes" paper ;)

Was suggested to me on FB, the original recipe can find it HERE  I substituted the topside of veal loin with maiale..proprio close to home we have a workshop of pork meat that has really good:)

here's the recipe with my changes ..

ingredients x 8/10 people:

Flour the meat, "massaging" with salt and pepper (I used the seasonings Ariosto for carvery).

In a pan put a little 'oil and brown the meat on all sides.

Add a clove of minced garlic, bay leaf and milk to almost cover the meat. Join a nut.

Cook for about an hour on low heat, cover with a lid and turning the meat occasionally.

When the meat is cooked, remove from pan.

Join the gravy, after removing the bay leaf, a knob of butter and a tablespoon of flour. Roughly chop the walnuts and add to the sauce along with a few leaves of fresh thyme. Thicken the milk cream with low heat. Cut the roast into thin slices, add the cream and serve:

Here is a recipe made for my love ... great lover of cipolle..anche if ... I think that it has not enjoyed much :(

to me it is ... oh yes! to me that until a few months ago I hated onions;)

and oh well ... .I me have just enjoyed ;)

here's ricetta..semplice simple!

x 2 servings Ingredients:

for noodles:

put the flour, add the eggs to the center

begin to mix the ingredients with a fork, then take the dough by hand.

Roll out the dough with a rolling pin on lightly floured work surface, roll it on itself (wiping it with a little 'semolina to prevent it from sticking) and cut the noodles with a sharp knife and lightly floured.

Boil in a pot: water, salt and a drop of olive oil.

The cream of onion: Wash and peel the onion, cut into thin slices

put a couple of tablespoons of olive oil and a tablespoon of water to simmer in a pan (for THIS to Pedrini..insostituibile ..).

Keep an eye on the cooking onion: should not become crispy but soften gradually. When the water has evaporated, add the white wine.
When the wine has evaporated, transfer the onion in the glass of the blender and blend it.

Put in a pan, add salt and a pinch of red pepper.

That's a long time the first dish I made for the birthday of my mother-in-law, more than a month ago ...

Are the pies of bucatini :) recipe, found on La Cucina Italian, was suggested to me on facebook e..come usual I have a little 'changed;)

Ingredients:

Boil in salted water the pasta, draining them a few minutes before the end of cooking.

Toss with the pesto red (if you have 10 more minutes you do, is simple, good and fragrant HERE the recipe I use) and some 'of white sauce.;)

Grease some aluminum molds, using a spoon and a fork, place a little 'bucatini coiled inside the molds. Enter a cube of mozzarella, close with two more (in number! :D ) bucatini, add a teaspoon of sauce and bake at 200 degrees for about 5 minutes.

Scaravoltare on plates, sprinkle with oregano and serve :) They did almost all the bis;)

These cookies have become almost a joker! I prepare them often! And even when I have a bit 'of time, prepare the dough and then freeze into loaves so it's always available;)

The recipe for the savory biscuits found HERE  This time I used all purpose flour antigrumi Molini Pivetti , sesame seeds Melandri Gaudenzio , I added to the mix one teaspoon of garlic and chili Ariosto and I did not put salt for decoration;)

Along with the cookies I served with tuna mousse:

simple to prepare but always successful ;)

Ingredients:

Put the ingredients in a blender and make them go until you get a nice smooth mousse.

This is the Dairy Spadi which is located in Roccastrada (GR), a short distance from me :)

It can be said that the family Spadi deals with the processing of milk and cheese always, have a look here:

The ancestors Spadi, originating in Marradi, a ground on the Tuscan village halfway between Florence and Faenza, made what was called "transhumance", or in winter reached the Tyrrhenian coast in Maremma, where the milder climate allowed pastures green in summer and returned to the mountains of the flowering. It was certainly not a pleasant walk: it was about a two-week journey on foot, with all the dangers and difficulties that you could meet on the rural roads of ancient Italy.

Then, in the 40s, Angelo Spadi married a "roccastradina" and decided to settle in Roccastrada, putting into practice the craft learned in family ..

Slowly over the years, from a simple attic where Angelo Spadi produced its cheese, they have made huge steps avanti..e son Enzo has pursued the company with excellent results.

To date, the Dairy Spadi produces excellent products, such as the  Pecorino Toscano DOP Pecorino Seasoned Cave, caciotta Maremma , the cheese matured in walnut leaves ..and many more!
